 Bryndzové halušky

„Noodles with a special kind of sheep cheese“

Ingredients:
thick/rough flour
fine whole wheat flour
4 big potatoes
2 eggs
250 g of bryndza (special kind of sheep cheese)
bacon
salt

Instructions:

Finely grate peeled raw potatoes, add the eggs, flour, salt and make a dough so it is adeguate thick that it will not crumble in boiling water. The dough is passed trough a special perforated instrument (haluškovač) into boiling water. If you have not anyone roll the dough on a wooden cutting board and cut off in even pieces (using a knife and cast directly into boiling hot salted water. Afte 1-2 minutes they rise to the surface, take them out, mix with bryndza (for good tasting you can mix bryndza with little bit of sour cream) and keep hot. Cut up little pieces (cubes) of bacon and fry them on themselves without using some oil. Halušky can be served with milk or sour milk.
So prepared halušky could be mix with eggs, curd, cabbage or some another kind of grated cheese.
